13.75 oz artichoke hearts packed in water, drained
10 oz frozen spinach, thawed and drained
1/4 cup chopped shallots
1 clove garlic
1/2 cup fat free Greek yogurt
1/2 cup fat free sour cream
2/3 cup parmesan/romano cheese
4 oz shredded part skim mozzarella cheese
salt and fresh pepper to taste
olive oil spray

Preheat oven to 375°.
In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
Combine all the ingredients in a medium bowl.
Place in an oven-proof dish and bake at for 20-25 minutes, until hot and cheese is melted. Serve right away.

Servings: 20 • Serving Size: 1 cookie • Calories: 100 • Fat: 7g
1/2 cup whole wheat flour
1/4 cup rolled oats
1/4 tsp baking soda
1/8 tsp cinnamon
6 tbsp unsalted butter, softened
6 tbsp brown sugar
2 tbsp granulated sugar
1 egg
1 tsp vanilla extract
1/2 cup semisweet chocolate chips
1/4 cup chopped pecans

Heat oven to 375. In a bowl combine flour, oats, baking soda and cinnamon.
In another bowl, cream butter and sugars until fluffy. 3-5 minutes. Add egg and vanilla; beat until smooth.
Combine both mixtures. Stir in chocolate chips and pecans. Drop onto ungreased cookie sheets. 1tbsp each and 2 inches apart.
Bake until golden brown. 9 minutes. Let cool.
