Turkey Meatballs and Pasta
Change up the flavor and cut the fat of your regular meatballs with this turkey meatball and pasta recipe. Lean ground turkey combines with bread crumbs, garlic, egg, Parmesan, and spices for a moist, delicious meatball that pairs perfectly with hearty pasta.
ingredients
3/4 lb 93% lean ground turkey
1/4 cup plain dry bread crumbs
2 cloves garlic, minced
1 large egg, lightly beaten
1/4 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
1/4 tsp ground black pepper
2 Tbsp butter
1 pint grape tomatoes, halved
8 oz rotini or other short pasta
additional ground black pepper to taste

Set a large pot of salted water to boil.
In a large bowl, combine turkey, breadcrumbs, garlic, egg, 2 Tbsp Parmesan, 1/4 cup parsley and 1/4 tsp pepper; mix to combine.
Using a level 1 Tbsp measure for each, form mixture into meatballs (you should have about 24).
In a large skillet, heat 1 Tbsp butter over medium-high heat.
Add meatballs and cook, turning occasionally until browned all over, about 5 – 7 minutes.
Add 1 1/2 cups water; simmer, stirring occasionally, until meatballs are cooked through and liquid is reduced to about 1/2 cup, about 10 – 12 minutes.
Add tomatoes, cook until they begin to soften, about 1 minute.
Meanwhile, cook pasta in boiling water according to package instructions.
Drain, return to pot and place on the still-warm burner.
Add turkey meatballs and sauce, remaining 1/4 cup parsley, remaining 2 Tbsp Parmesan and remaining Tbsp butter.
Season with additional pepper, if desired, and toss until combined.
