Tortellini with Shrimp

Fresh vegetables and shrimp tossed with cheese tortellini make an elegant pasta dish for a dinner party or even casual celebration. Fresh basil brings the whole thing together nicely, and adds that fresh flair so typical of Italian cooking.


1 ( 16 – oz ) pkg. frozen cheese tortellini

3 Tbsp extra virgin olive oil

1 lb large raw shrimp, peeled and deveined

1/2 lb asparagus spears, trimmed, cut diagonally into 1 1/2-inch pieces

2 cups halved cherry tomatoes, divided

5 large garlic cloves, chopped

1/2 cup packed fresh basil leaves, coarsely chopped

1/4 cup shredded Parmesan (optional)


In a large pot of lightly salted boiling water cook pasta al dente according to package directions. Drain, reserving 1/4 cup of the pasta water. Set aside.

In a large skillet heat oil over medium-high heat. Add shrimp, asparagus, 1 cup of the tomatoes, plus garlic; cook and stir 4-5 minutes or until shrimp are pink.

Add pasta, remaining 1 cup tomatoes, plus basil and reserved pasta water; cook and stir until heated through. Season with salt and pepper to taste, sprinkle with Parmesan (if desired), and serve.
